Green Giant Stuffed Turkey Burgers

On a sunny weekend, it’s always fun to roll out the grill and have dinner on the lanai. We have it so good here in Hawaii, because sunny weekends are not an unusual event. Needless to say, grilling is also pretty common! Following the tips on my last post about grilling, I encourage you to give this recipe a try! I tested it out this past weekend and it was a hit! Filled with creamy avocado, this burger will please the hungriest friend or family member. You can serve it on a whole grain bun or bed of green lettuce.

Green Giant Stuffed Turkey Burgers

Ingredients
  • 1/2 avocado, large
  • 1 Tbsp lime juice, about 1/2 lime
  • 1/4 small onion, finely diced
  • 2 clove garlic, minced
  • 1 pound turkey, ground
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1 small can tomatillo salsa
Instructions
  1. Mash the flesh of the avocado with lime juice, garlic, and onion until smooth or slightly chunky. Set aside.
  2. Form mince meat into 8 evenly sized balls. Flatten balls into semi-thin patties. Overworking the meat will leave them dry and tough so do not kneed or overwork the meat as you go along.
  3. Spread a dollop of avocado mash evenly into the center of one patty. Take a second patty and set it on top of the avocado dollop so avocado is trapped inside. Seal edges together with fingers and reform patty so it’s even.
  4. Repeat with remaining patties.
  5. In a separate bowl, combine cumin, cayenne, salt, and pepper. Sprinkle evenly over both sides of the burgers.
  6. Grill burgers for 5-7 minutes or until desired doneness.
  7. Pour green salsa on top and serve on a bun or bed of greens.
