Creamy, mashed…potato?

If there was a way to eat creamy mashed potatoes without worrying about your weight or health, wouldn’t you just want to dive in and eat a whole, big bowl of the stuff?? Me too!

I love empowering my clients with recipes and ideas that prove that for every tasty traditional meal there is a better alternative; a healthier alternative that won’t leave you feeling bloated, fatigued and guilty, an alternative that will make you feel alive and energized and great about your body. This is how I want all my clients to feel and this is how I want you to feel too!

So, today I want to share one of those alternatives with you. I am so excited about this awesome alternative let me get straight to it…instead of mashed potato try…

CREAMY MASHED CAULIFLOWER

Ingredients:

  • 1 head cauliflower
  • ¼ cup unsweetened coconut milk
  • ¼ teaspoon salt
  • ¼ teaspoon pepper

Instructions:

Cut your cauliflower into small pieces.  Steam the cauliflower until tender (about 10 min). Place cauliflower in a blender or food processor. Add dairy-free milk, salt, and pepper while blending until smooth. Remove from blender and put into a serving bowl.

Chef’s tips:

*Make sure that the cauliflower is soft before removing from steamer. If it’s not soft, it won’t mash nicely, so rather steam for longer.

*Serving suggestion: healthy home-made mushroom gravy, big salad and a piece of clean, lean protein.

Part of what I love about this recipe is that it allows us to play. As adults, we don’t play enough… if you’re in the mode for a little mischief this weekend serve it on an unhealthy, unsuspecting friend or relative – serve it up as mashed potato and take note of their response. They’ll probably only notice a difference once they’re done with their meal and they’re buzzing with good health!
