Nori Handrolls with Smoked Salmon and Avocado

Most of my clients are looking for simple and quick recipes that are also healthy. If you can relate, this recipe is for you!

Combining mineral rich nori (seaweed) and healthy fats from smoked salmon and avocado will help to provide you with sustained energy. The crunchy pepper and lettuce will add texture and extra fiber to keep you full. Pair it with some brown rice if you need some additional calories.

Nori Handrolls with Smoked Salmon and Avocado

Makes two large handrolls. Enough to satisfy one hungry person!
Ingredients
  • 2 sheets Nori (dried seaweed used for making sushi rolls)
  • 2 leaves butter lettuce, Boston, or Romaine lettuce works well
  • 1 small avocado
  • 4 oz smoked salmon, flaked
  • 1/2 red bell pepper, thinly sliced
  • 2 green onions, diced
Instructions
  1. Place 1 sheet Nori on cutting board. Top with 1 lettuce leaf, half of the avocado (sliced), half of the smoked salmon, half of the sliced bell pepper, and 1 green onion. Roll into a cone-shape, or a burrito-shape.
  2. Repeat with remaining ingredients. Serve immediately.
