Nori Handrolls with Smoked Salmon & Avocado

Nori Handrolls with Smoked Salmon and Avocado

Makes two large handrolls. Enough to satisfy one hungry person!
Servings: 1 serving
Time: 5 minutes
Ingredients
  • 2 sheets Nori (dried seaweed used for making sushi rolls)
  • 2 leaves lettuce, butter, Boston,or Romaine lettuce works well
  • 1 small avocado
  • 4 oz smoked salmon, flaked
  • ½ red bell pepper, thinly sliced
  • 2 green onions
Instructions
  1. Place 1 sheet Nori on cutting board. Top with 1 lettuce leaf, half of the avocado (sliced), half of the smoked salmon, half of the sliced bell pepper, and 1 green onion. Roll into a cone-shape, or a burrito-shape.
  2. Repeat with remaining ingredients. Serve immediately.
