Ready for a holiday drink recipe that is actually GOOD for you? Look no further. This recipe, inspired by FemFusion Fitness, is one of my new favorites this holiday season.
It’s pretty great for those with allergies to dairy or eggs and a special treat for the whole family– even the kids! Of course, you can replace the rum extract with real rum, but I prefer to stay clear-headed and stick with the alcohol-free version. It’s delish and a great treat after dinner. Since it’s sweetened with dates, you don’t have to worry as much about the sugar content and the healthy fats from the cashews and coconut milk will help stabilize your blood sugar.
If you are looking for a quick breakfast, you can add a scoop of high quality plain or vanilla protein powder to the mix for a holiday smoothie!
Healthy Holiday Nog
- 6 dates, plump
- 1 heaping Tbsp raw cashews
- 1 cup unsweetened almond milk
- 1/2 cup coconut milk, from can
- 1/2 tsp pure vanilla extract
- 1/2 tsp cinnamon, ground
- 1/4 tsp nutmeg + extra for garnish
- 1.5-2 oz spiced rum OR rum extract for virgin nog
-
Place dates and cashews in small bowl. Cover with just enough water to cover. Let soak for 5-10 minutes until dates soften.
-
Do not drain dates and nuts. Add them to blender along with remaining ingredients.
-
Blend on HIGH for 2 minutes or until all visible chunks of nuts or dates is gone. Nog should be smooth and creamy!
-
Pour into two classes and refrigerate for at least an hour to allow flavors to blend.
-
Stir and garnish with additional nutmeg before serving! For a sweeter touch, add a tsp of honey or stevia at time of service.
