Superfoods in your dessert?

Imagine a world where dessert was not an inconvenient source of guilt or empty calories, but was instead a deliciously convenient source of superfoods. Imagining will only get you so far – if you’d prefer to create such a world, you’ve come to the right place!

Firstly, what exactly is a ‘superfood’? According to David Wolfe, who wrote a book on the subject, entitled ‘Superfoods: The Food and Medicine of the Future’, superfoods are ‘a class of the most potent, super-concentrated, and nutrient-rich foods on the planet – they have more bang for the buck than our usual foods…superfoods have the ability to tremendously increase the vital force and energy of one’s body, and are the optimum choice for improving overall health'(page 2-3; Wolfe, Superfoods).

All of the recipes posted in this blog will include at least one superfood. In this post, I wanted to touch on the concept of food being our medicine, by introducing superfoods, as well as provide a how-to on transforming that potentially processed, artificial after-dinner treat into a delicious dessert that serves your body and your taste buds.

Superfood desert ingredients

Beautiful Ingredients – Mixed Berries, Almonds, Cocoa, Coconut Milk, Banana, Mint and Shaved Coconut

Coconut Blueberry Sorbet

Ingredients: for 2 –  3 servings (depending on how full you are from dinner!)

2 frozen bananas (peeled)

1 and ½ cups of Frozen Organic Blueberries (or Mixed Berry Blend which include Goji Berries and Blueberries)

1 cup of coconut milk

2 tbs shaved coconut

2 tbs raw cacoa (available from most health food stores)

1/4 cup slivered almonds

Handful of mint

Directions:

  1. Blend bananas, berries and coconut milk in a blender
  2. Place mixture in two or three bowls, divide the coconut, almonds, cacao and mint evenly and place on top.
  3. Serve immediately, before it melts.

It is sooo tasty – I’m humming with every bite!

Why is this a superfood recipe? Each one of the following foods could be a post or even chapter of their own (many of them are in Wolfe’s book), but in a nutshell;

  • Blueberries are jam-packed with antioxidants and phytoflavinoids, which ward off disease and protect our cells against oxidative stress.
  • Coconuts contain medium chain fatty acids that have been shown to have a vast array of health promoting benefits, including improved brain function.
  • Raw Cacoa is said to have ‘the highest concentration of antioxidants of any food in the world. These include polyphenols, catechines and epicatechines’ (Wolfe, Superfoods, page 40).
  • Almonds are a heart healthy source of Vitamin E and magnesium and various studies now link frequent almond consumption to weight loss.
