Meatless Monday Recipe – Super Nutritious and Delicious!

Want a great way to start your week the healthy way? This recipe is taken from Dr Joel Fuhrman’s book ‘Eat to Live’ (Page 270- 271). Dr Fuhrman has a wonderful approach to health, focusing on nutrient dense foods that prevent disease and make you feel amazing! I made this recipe for my friend’s birthday party last weekend and everyone loved it.

Black Bean Lettuce Bundles:

Serves 4.

Ingredients:

2 cups cooked or canned no salt added or low sodium black beans, drained and rinsed

1/2 a large, ripe avocado, peeled, pitted and mashed

1/2 a medium green bell pepper, seeded and chopped

3 green onions, chopped

1/3 cup chopped fresh cilantro

1/3 cup no salt added or low sodium salsa

2 tablespoons fresh lime juice

1 clove garlic, minced

1 teaspoon ground cumin

8 large romaine lettuce leaves

Instructions:

  1. In a bowl, mash the beans and avocado together with a fork until well blended and only slightly chunky.
  2. Add all the remaining ingredients, except the lettuce, and mix.
  3. Place approximately 1/4 cup of the mixture in the centre of each lettuce leaf and roll up like a burrito.
  4. Enjoy!

A reduction in meat consumption not only reduces your relative risk of certain cancers, heart disease and diabetes, it also has important environmental benefits – the meat industry contributes more man-made green house gas emissions than the transportation industry and uses about 2000 gallons of water per pound of beef!
