Want a great way to start your week the healthy way? This recipe is taken from Dr Joel Fuhrman’s book ‘Eat to Live’ (Page 270- 271). Dr Fuhrman has a wonderful approach to health, focusing on nutrient dense foods that prevent disease and make you feel amazing! I made this recipe for my friend’s birthday party last weekend and everyone loved it.
Black Bean Lettuce Bundles:
2 cups cooked or canned no salt added or low sodium black beans, drained and rinsed
1/2 a large, ripe avocado, peeled, pitted and mashed
1/2 a medium green bell pepper, seeded and chopped
3 green onions, chopped
1/3 cup chopped fresh cilantro
1/3 cup no salt added or low sodium salsa
2 tablespoons fresh lime juice
1 clove garlic, minced
1 teaspoon ground cumin
8 large romaine lettuce leaves
- In a bowl, mash the beans and avocado together with a fork until well blended and only slightly chunky.
- Add all the remaining ingredients, except the lettuce, and mix.
- Place approximately 1/4 cup of the mixture in the centre of each lettuce leaf and roll up like a burrito.
