Nori Handrolls with Smoked Salmon and Avocado
Makes two large handrolls. Enough to satisfy one hungry person!

Ingredients

2 sheets Nori (dried seaweed used for making sushi rolls)

2 leaves lettuce, butter, Boston,or Romaine lettuce works well
- 1 small avocado
- 4 oz smoked salmon, flaked

½ red bell pepper, thinly sliced
- 2 green onions
Instructions

Place 1 sheet Nori on cutting board. Top with 1 lettuce leaf, half of the avocado (sliced), half of the smoked salmon, half of the sliced bell pepper, and 1 green onion. Roll into a cone-shape, or a burrito-shape.

Repeat with remaining ingredients. Serve immediately.
